Add plot descriptions from watches

I used the nice descriptions on the watches website to add information to the API reference structure for plotting functions. I then added a few cross-references in the examples vignettes to the plotting functions in the API reference page. The build is immediately failing for me but I wonder if that is because my personal repo is not properly formatted to run the docker tests, etc.
