Maca monthly workflows

This merge request add workflows for converting the MACAv2 Monthly data to zarr stores. Since the daily data is very big, I'd like to get a review of these, to make the resulting zarr files are sufficient, before working on dialy data.

The README.md provides a general overview of the workflow.
